  • 4 cups diced potatoes (peeled)
  • 1 small onion, finely chopped
  • 2 celery stalks, chopped
  • 1 carrot, chopped
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup milk (or cream for a richer taste)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: bacon bits, shredded cheese, chopped parsley for garnish
Equipment:
  • Large pot
  • Measuring cups and spoons
  • Knife and cutting board
  • Ladle
Directions:
  1. In a large pot, melt the butter over medium heat. Add the chopped onions, celery, and carrots. Cook until softened, about 5 minutes.
  2. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Use a potato masher or an immersion blender to partially mash the potatoes in the pot, leaving some chunks for texture.
  4. Stir in the milk and season with salt and pepper to taste. Heat through, but do not boil.
  5. Serve hot, garnished with bacon bits, shredded cheese, and chopped parsley if desired.
