Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons piri piri seasoning (store-bought or homemade)
  • Salt and pepper, to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Fresh parsley, chopped, for garnish
  • Cooked rice or crusty bread, for serving
Instructions:

  1. Preheat your oven to 200°C (about 400°F).
  2. Pat the chicken thighs dry with paper towels and season them generously with salt, pepper, and half of the piri piri seasoning.
  3. Heat the olive oil in a large oven-safe skillet or cast-iron pan over medium-high heat. Once hot, add the seasoned chicken thighs to the pan, skin side down. Cook for 5-6 minutes, or until the skin is golden brown and crispy. Flip the chicken thighs over and cook for an additional 2-3 minutes on the other side. Remove the chicken thighs from the pan and set them aside on a plate.
  4. In the same skillet, add the sliced bell peppers, red onion, and minced garlic. Cook for 3-4 minutes, or until the vegetables are slightly softened.
  5. Return the seared chicken thighs to the skillet, arranging them on top of the vegetables.
  6. Sprinkle the remaining piri piri seasoning over the chicken and vegetables, ensuring they are evenly coated.
  7. Place the lemon slices on top of the chicken thighs.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (about 165°F).
  9. Once cooked, remove the skillet from the oven and let it rest for a few minutes.
  10. Garnish the One-Pan Piri Piri Chicken Dinner with chopped fresh parsley and serve hot with cooked rice or crusty bread on the side.
