Ingredients:
- Oyster mushrooms, thinly sliced (about 250 grams)
- Mixed vegetables (bell peppers, broccoli, carrots, etc.), chopped into bite-sized pieces (about 2 cups)
- Garlic, finely minced (2 cloves)
- Soy sauce (2-3 tablespoons, adjust to taste)
- Sesame oil (1 tablespoon)
- Salt and pepper, for seasoning (to taste)
- Your choice of rice or noodles to serve alongside
- Heat a tablespoon of sesame oil in a large pan over medium heat. Once the oil is hot, add the minced garlic and sauté until fragrant, about 1 minute.
- Add the sliced oyster mushrooms and mixed vegetables to the pan. Stir-fry until the vegetables are tender yet still retain a bit of crunch, about 5-7 minutes.
- Pour in 2-3 tablespoons of soy sauce, depending on your taste preferences. Give everything a good stir to ensure the mushrooms and vegetables are evenly coated.
