Ingredients:

  • Oyster mushrooms, thinly sliced (about 250 grams)
  • Mixed vegetables (bell peppers, broccoli, carrots, etc.), chopped into bite-sized pieces (about 2 cups)
  • Garlic, finely minced (2 cloves)
  • Soy sauce (2-3 tablespoons, adjust to taste)
  • Sesame oil (1 tablespoon)
  • Salt and pepper, for seasoning (to taste)
  • Your choice of rice or noodles to serve alongside
Instructions:

  1. Heat a tablespoon of sesame oil in a large pan over medium heat. Once the oil is hot, add the minced garlic and sauté until fragrant, about 1 minute.
  2. Add the sliced oyster mushrooms and mixed vegetables to the pan. Stir-fry until the vegetables are tender yet still retain a bit of crunch, about 5-7 minutes.
