Ingredients:​

For the Sardines:​

  • Fresh sardines, cleaned and gutted
  • Salt and pepper to taste

  • 2 tablespoons capers, drained and chopped

Instructions:​

For the Salsa Verde:​

  1. In a bowl, combine the chopped parsley, basil, capers, and minced garlic.
  2. Add the Dijon mustard and red wine vinegar to the bowl and mix well.
  3. Slowly drizzle in the olive oil while whisking constantly until the mixture is well combined and has a slightly thick consistency.
  4. Season with salt and pepper to taste. Adjust the seasoning according to your preference.
  5. Set the salsa verde aside while you prepare the sardines.

For the Sardines:​

  1. Rinse the sardines under cold water and pat them dry with paper towels.
  2. Score the skin of the sardines diagonally with a sharp knife on both sides. This helps them cook evenly and allows the flavors to penetrate.
  3. Season the sardines generously with salt and pepper on both sides.
  4. Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  5. Once the oil is hot, add the sardines to the skillet, skin side down. Cook for about 3-4 minutes on each side until the skin is crispy and the flesh is cooked through.
  6. Remove the sardines from the skillet and transfer them to a serving platter.
  7. Spoon the salsa verde over the sardines or serve it on the side as a dipping sauce.
  8. Garnish with additional chopped parsley or basil if desired.
  9. Serve the pan-fried sardines with salsa verde immediately while they are still warm.
