  • 8 oz (225 g) pasta (such as penne or farfalle)
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Optional: red pepper flakes for extra heat

Instructions​

  1. Cook the Pasta:
    • Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the Vegetables:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the diced onion and cook until translucent, about 3-4 minutes.
    • Stir in the garlic and cook for another 1 minute.
    • Add the bell peppers, zucchini, cherry tomatoes, and broccoli. Cook until the vegetables are tender-crisp, about 5-7 minutes.
  3. Combine and Season:
    • Add the cooked pasta to the skillet and toss with the vegetables.
    • Stir in the grated Parmesan cheese and fresh basil. Season with salt, pepper, and red pepper flakes if using.
    • Cook for an additional 1-2 minutes until everything is well combined and heated through.
  4. Serve:
    • Serve the Pasta Primavera warm, garnished with extra Parmesan and basil if desired.
