- Thinly sliced pastrami (about 4-6 ounces per sandwich)
- Swiss cheese slices
- Dill pickles, thinly sliced
- Mustard (deli-style or Dijon, to taste)
- Optional: sauerkraut, coleslaw, or Russian dressing
- Preheat a skillet or griddle over medium heat.
- Lightly toast the rye bread slices on one side.
- Meanwhile, warm the pastrami slices in the skillet until heated through.
- Once the bread is toasted, remove from the skillet and spread mustard on the untoasted side of each slice.
- Layer the pastrami slices on one slice of bread, followed by Swiss cheese slices and dill pickles.
- If desired, add sauerkraut, coleslaw, or a drizzle of Russian dressing.
- Top with the other slice of bread, mustard side down, to form a sandwich.
- Return the sandwich to the skillet and grill on each side until the bread is golden brown and the cheese is melted.
- Remove from the skillet, slice in half if desired, and serve hot.
