Ingredients:
- 2 white peaches, pitted and finely chopped
- 1/3 cup (80ml) lime juice
- 1/4 cup (55g) caster sugar
- Extra thinly sliced peach, for serving
- Raspberries, for serving
- 1/2 cup (125ml) gin (optional)
- Crushed ice
- 1.25L chilled sparkling lemon or lime mineral water
- Fresh mint leaves, for serving
Instruction:
- In a saucepan over low heat, combine chopped peaches, lime juice, and sugar. Cook for 5-7 minutes until the peaches are very tender. Remove from heat and blend until smooth. Chill in the fridge.
- Divide extra peach slices and raspberries among serving glasses.
- In a jug, mix the peach puree with gin (if using).
- Pour the peach-gin mixture evenly into the glasses.
- Add crushed ice to each glass, then top up with chilled sparkling mineral water.
- Garnish with fresh mint leaves.
