I recently made Peruvian Lomo Saltado, and it was a delightful experience! This flavorful stir-fry combines marinated beef, vibrant vegetables, and a tangy sauce, all served over crispy fries or rice. Here’s how you can make it at home:

Ingredients:​

For the Marinade:​

  • 1 lb (450g) beef sirloin, cut into strips
  • 3 tablespoons soy sauce
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste

For the Stir-Fry:​

  • 2 tablespoons vegetable oil
  • 1 large red onion, sliced
  • 2 medium tomatoes, cut into wedges
  • 1-2 aji amarillo peppers (or 1 bell pepper), sliced
  • 1/4 cup soy sauce
  • 1 tablespoon red wine vinegar
  • 1/4 cup beef broth (optional)
  • Fresh cilantro, chopped (for garnish)
  • French fries or cooked white rice, for serving

Instructions:​

1. Marinate the Beef:​

  • In a bowl, combine the soy sauce, red wine vinegar, minced garlic, ground cumin, salt, and pepper.
  • Add the beef strips, mixing well to coat. Let it marinate for at least 30 minutes, or up to 2 hours for more flavor.

2. Prepare the Stir-Fry:​

  • Heat the vegetable oil in a large skillet or wok over high heat.
  • Add the marinated beef and stir-fry until it’s browned and cooked to your liking. Remove the beef from the skillet and set it aside.
  • In the same skillet, add the sliced onions and stir-fry for a couple of minutes until they start to soften.
  • Add the tomatoes and aji amarillo peppers (or bell peppers) and stir-fry for another few minutes until the vegetables are tender but still crisp.

3. Combine Everything:​

  • Return the beef to the skillet with the vegetables.
  • Add the soy sauce, red wine vinegar, and beef broth (if using). Stir well to combine and heat through for about 1-2 minutes.
  • Adjust the seasoning with salt and pepper, if needed.

4. Serve:​

  • Serve the lomo saltado hot, garnished with fresh cilantro.
  • Traditionally, it’s served with crispy French fries and/or steamed white rice. You can serve it on the side or mix the fries directly into the stir-fry for extra flavor.
