  • 1 medium head of cabbage, thinly sliced
  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 1 tbsp salt
  • 1 tsp mustard seeds
  • 1 tsp coriander seeds
  • 1/2 tsp black peppercorns
  • 2 garlic cloves, smashed
  • 1 bay leaf
Procedure:

  1. In a large bowl, place the thinly sliced cabbage.
  2. In a saucepan, combine vinegar, water, sugar, salt, mustard seeds, coriander seeds, black peppercorns, garlic, and bay leaf. Bring to a boil, then reduce heat and simmer for 5 minutes.
  3. Pour the hot brine over the cabbage, ensuring it's fully submerged.
  4. Let it cool to room temperature, then transfer to a clean jar and refrigerate.
  5. Allow the cabbage to pickle for at least 24 hours before serving for best flavor.
