Pineapple Bread

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup crushed pineapple, drained
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs lightly, then add the crushed pineapple (make sure it's well drained), vegetable oil, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and spread it out evenly.
  6. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once cooled, slice and serve! Enjoy your homemade pineapple bread.
