Ingredients:

  • 4 pork chops
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 cup pineapple chunks (fresh or canned)
Instructions:

  1. In a bowl, mix together pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper. Reserve 1/4 cup of marinade for later use.
  2. Place pork chops in a shallow dish or resealable plastic bag and pour marinade over them. Make sure the pork chops are evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Heat vegetable oil in a skillet over medium-high heat. Remove pork chops from marinade (discard excess marinade) and cook in the skillet for 4-5 minutes on each side, or until browned and cooked through.
  4. Add reserved marinade and pineapple chunks to the skillet. Cook for an additional 2-3 minutes, until the sauce is heated through and slightly thickened.
  5. Serve the pork chops with the pineapple sauce spooned over the top. Enjoy your pineapple pork chops!
