  • 1 lb pork tenderloin, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1/4 cup teriyaki sauce
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)
  • Sliced green onions, for garnish (optional)
Instructions:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced pork tenderloin to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
  3. In the same skillet, add the pineapple chunks, sliced bell peppers, sliced onion, and minced garlic. Stir-fry for 3-4 minutes, or until the veggies are tender-crisp.
  4. Return the cooked pork to the skillet and pour the teriyaki sauce over the pork and veggies. Stir well to coat everything in the sauce.
  5. Cook for an additional 2-3 minutes, or until the sauce has thickened slightly and everything is heated through.
