Ingredients:
- 200g pink oyster mushrooms
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tsp fresh thyme (or 1/2 tsp dried)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (optional)
Instructions:
- Gently clean the mushrooms with a damp cloth and slice them into bite-sized pieces.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and onion, sautéing until fragrant and the onion is translucent.
- Toss in the mushrooms and thyme, cooking until the mushrooms are tender and lightly browned, about 5-7 minutes.
- Season with salt and pepper to taste. Give it a good stir to ensure the flavors are well combined.
- Serve hot, garnished with fresh parsley and a squeeze of lemon juice if you like a little extra zing.
