Hey food lovers! Today, I'm super excited to share one of my all-time favorite comfort foods—Pork Adobo. This Filipino classic is a perfect blend of savory, tangy, and slightly sweet flavors that will have you coming back for seconds (and thirds!).

Ingredients​

  • 2 lbs pork belly
  • 2 tablespoons garlic
  • 5 dried bay leaves
  • 4 tablespoons vinegar
  • 1/2 cup soy sauce
  • 1 tablespoon peppercorn
  • 2 cups water
  • Salt to taste

Instructions​

  • Combine the pork belly, soy sauce, and garlic in a bowl, then let it marinate for at least one hour. Use 2 pounds of pork belly, 1/2 cup of soy sauce, and 2 tablespoons of minced garlic.
  • Next, heat a pot and add the marinated pork belly, cooking it for a few minutes. Include the remaining marinade with the garlic.
  • Add 1 tablespoon of whole peppercorns, 2 cups of water, and 5 dried bay leaves to the pot, then bring it to a boil. Lower the heat and let it simmer for 40 minutes to an hour.
  • Afterward, add 4 tablespoons of vinegar and continue to simmer for an additional 12 to 15 minutes.
  • Season with salt to taste.
  • Serve the dish hot, and enjoy sharing it with others!

This recipe looks fantastic! I think using a slow cooker could really help the flavors develop. Though, I’d love to hear if you have any secrets for balancing the sweetness and tanginess. 😋
