  • 1 teaspoon crushed red pepper flakes
  • 2 sprigs fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1/4 cup tomato paste
  • 1 cup red wine
  • 2 cups chicken stock

Instructions:

  1. Season and Sear: Season the pork chops with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the crushed garlic and stir for a few seconds to infuse the oil. Add the pork chops and sear on both sides until caramelized, about 2-3 minutes per side. Remove the chops and set them aside.
  2. Cook Aromatics: In the same skillet, add the fennel seed, chopped onion, red pepper flakes, and oregano. Reduce the heat and cook until the onions are soft, about 7-8 minutes.
  3. Add Tomato Paste and Wine: Stir in the tomato paste and cook for 1 minute. Pour in the red wine and cook for another minute, letting it reduce slightly.
