I made this dish last night, and it was such a hit, I had to share. It’s super easy, and the combo of pork chops, apples, and bacon is just chef’s kiss. Perfect for a cozy dinner. Here’s how I did it:

I made this dish last night, and it was such a hit, I had to share. It’s super easy, and the combo of pork chops, apples, and bacon is just chef’s kiss. Perfect for a cozy dinner. Here’s how I did it:
Ingredients:
- 4 boneless pork chops (about 1 inch thick)
- 4 slices of bacon, chopped
- 2 medium apples (I used Honeycrisp), thinly sliced
- 1 medium onion, thinly sliced
- 1/2 cup chicken broth
- 1/4 cup apple cider (optional but adds so much flavor!)
- 2 tbsp olive oil
- 1 tsp thyme (fresh or dried)
- Salt and pepper to taste
Steps:
- Cook the bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove it with a slotted spoon and set aside, leaving the bacon grease in the pan.
- Sear the pork chops: Season the pork chops with salt and pepper. Add them to the skillet and sear on both sides until golden brown (about 3 minutes per side). Remove and set aside.
- Sauté the apples and onions: Add olive oil if needed. Toss in the apple slices and onions, cooking until softened and slightly caramelized. Sprinkle with thyme.
- Deglaze and simmer: Pour in the chicken broth (and apple cider, if using) to deglaze the pan. Scrape up the yummy bits at the bottom. Let it simmer for 2 minutes.
- Combine everything: Return the pork chops and bacon to the skillet. Cover and cook for another 5-7 minutes until the pork is fully cooked (internal temp should be 145°F).
- Serve: Spoon the apples, onions, and bacon over the pork chops and enjoy!
