Servings: 16 slices (makes 2 loaves)

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda, sifted
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp fine sea salt
  • 3 large eggs, room temperature
  • 1 cup extra light olive oil (or vegetable or corn oil)
  • 15 oz pumpkin puree

Instructions​

  1. Preheat and Prep:
    • Preheat your oven to 350°F (175°C).
    • Butter and lightly dust with flour two 8 1/2" x 4 1/2" bread pans.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together:
      • 2 cups all-purpose flour
      • 1 1/2 cups granulated sugar
      • 1 tsp baking soda (sifted)
      • 2 tsp baking powder
      • 2 tsp cinnamon
      • 1/2 tsp fine sea salt
  3. Mix Wet Ingredients:
    • In a medium mixing bowl, whisk together:
      • 3 large eggs (room temperature)
      • 1 cup extra light olive oil (or vegetable or corn oil)
      • 15 oz pumpkin puree
  4. Combine and Bake:
    • Pour the wet ingredients into the dry ingredients.
    • Whisk until smooth.
    • Divide the batter evenly between the two prepared bread pans.
    • Bake at 350°F for 45-55 minutes, or until a toothpick inserted into the center comes out clean (my oven took 50 minutes).
  5. Cool:
    • Let the loaves cool in the pans for 10-15 minutes.
    • Transfer to a wire rack to cool completely.

Notes​

  • Bake times can vary based on your oven and the color of your baking pan. Darker pans will bake faster, while lighter pans will take longer.
