Quick & Dreamy Whoopie Pies

Ingredients:

For the Whoopie Cookies:

  • 1 box chocolate cake mix
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup vegetable oil
For the Filling:
  • 1 cup butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tsp vanilla extract

Instructions:

  1. Pre-heat your oven to 350°F. Line a baking sheet with parchment paper.
  2. Make the whoopie batter by mixing the cake mix, egg, milk, and oil together in a bowl until just combined. No need to overwork it!
  3. Scoop rounds of batter (about 2 tbsp each) onto the prepared baking sheet, spacing them a couple inches apart. You want rounds, not perfect circles!
  4. Bake those cookie rounds for 8-10 minutes until they're set but still soft in the middle. Allow them to cool completely on the baking sheet.
  5. While the cookies cool, make the luscious filling by beating the softened butter until light and fluffy. Gradually mix in the powdered sugar and vanilla until thick and creamy.
  6. Once cooled, flip half the cookies flat-side up. Dollop or pipe the filling generously onto the flat sides.
  7. Top with the remaining cookies, flat-side down, to create your whoopie pie sandwiches.
  8. For best texture, refrigerate the finished whoopie pies for 30 minutes before devouring.
