Craving something sweet and tropical?
With just a few ingredients and a little chill time in the fridge, you'll be enjoying creamy, mango-infused goodness in no time.
Ingredients:
- 2 ripe mangoes, peeled and diced
- 1/2 cup sweetened condensed milk
- 1 cup milk (can use whole milk or coconut milk for extra richness)
- 1/2 teaspoon vanilla extract
- 2 tablespoons plain gelatin powder
- 2 tablespoons cold water
- Fresh mango slices
Instructions:
1. In a blender or food processor, blend the diced mangoes until smooth.
2. In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.
3. In a saucepan, heat the milk and sweetened condensed milk over medium heat until warm but not boiling.
4. Add the bloomed gelatin mixture to the warm milk mixture and stir until the gelatin is completely dissolved.
5. Remove the saucepan from heat and stir in the vanilla extract.
6. Gradually pour the mango puree into the milk mixture, stirring until well combined.
7. Divide the mango pudding mixture evenly among serving glasses or bowls.
8. Refrigerate the pudding for at least 2 hours, or until set.
9. Once set, garnish with fresh mango slices
