  • 1 large red onion (or white/yellow onion if preferred)
  • 1 cup white vinegar (you can also use apple cider vinegar or red wine vinegar)
  • 1 cup water
  • 1 tablespoon sugar
  • 1.5 teaspoons salt
  • Optional add-ins for extra flavor:
    • 1-2 cloves of garlic, sliced
    • 1 teaspoon black peppercorns
    • 1 teaspoon mustard seeds
    • 1/2 teaspoon red pepper flakes
    • A few sprigs of fresh herbs (like thyme or dill)

Instructions:​

  1. Prepare the Onions:
    • Peel and thinly slice the onions. You can use a mandoline for even slices.
  2. Make the Pickling Brine:
    • In a small saucepan, combine the vinegar, water, sugar, and salt. Add any optional add-ins if using.
    • Bring the mixture to a boil over medium heat, stirring until the sugar and salt are completely dissolved. Remove from heat.
  3. Pickle the Onions:
    • Place the sliced onions in a clean, heat-proof jar or bowl.
    • Pour the hot brine over the onions, making sure they are fully submerged.
    • Let the onions cool to room temperature, then cover and refrigerate.
  4. Wait and Enjoy:
    • The onions will be ready to eat in about an hour, but they’ll taste even better after a few hours or overnight.
    • Store the pickled onions in the refrigerator for up to 2 weeks.
