Hey foodies! Want to spice up your dinner routine? This African Black Beans Stew is packed with flavors and so easy to make. Perfectly hearty, healthy, and comforting. Let’s bring a taste of Africa to your table!
- 2 cups dried black beans, soaked overnight and drained
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 2 carrots, chopped
- 2 tomatoes, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (optional)
- 4 cups vegetable broth or water
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until they are translucent.
- Stir in the bell pepper and carrots, cooking for another 5 minutes until softened.
- Add the diced tomatoes, ground cumin, paprika, ground coriander, and cayenne pepper. Cook for a few minutes until fragrant.
- Add the soaked black beans and pour in the vegetable broth or water.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the beans are tender.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro or parsley before serving.
