Ingredients:

  • 2 cups dried black beans, soaked overnight and drained
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 2 tomatoes, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth or water
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until they are translucent.
  3. Stir in the bell pepper and carrots, cooking for another 5 minutes until softened.
  4. Add the diced tomatoes, ground cumin, paprika, ground coriander, and cayenne pepper. Cook for a few minutes until fragrant.
  5. Add the soaked black beans and pour in the vegetable broth or water.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the beans are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro or parsley before serving.
