Ingredients:


  • 1 pound dried black beans, rinsed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 4 cups vegetable broth or water
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish
Instructions:

  1. Set your Instant Pot to sauté mode. Add the olive oil.
  2. Once the oil is hot, add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Add the ground cumin, paprika, chili powder, and dried oregano. Stir for about a minute until fragrant.
  4. Add the rinsed black beans and vegetable broth or water.
  5. Secure the lid on the Instant Pot and set the valve to the sealing position.
  6. Cook on high pressure for 35 minutes.
  7. Allow the pressure to release naturally for 20 minutes, then carefully quick release any remaining pressure.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh cilantro or green onions before serving.
