  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 1/2 cup fresh cilantro, chopped (optional)
  • Lime wedges, for serving
Instructions:

  1. Sauté Vegetables: In a large pot or skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until they are softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Cook Rice: Add the rice to the pot and stir to coat with the oil and vegetables. Pour in the vegetable broth (or chicken broth) and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  3. Add Beans and Spices: Stir in the black beans, kidney beans, ground cumin, paprika, dried oregano, chili powder, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally, until everything is heated through and well combined.
  4. Garnish: Remove from heat and stir in the fresh cilantro, if using.
  5. Serve: Serve the rice and beans hot, with lime wedges on the side for squeezing over the top.
