- 1 leg of lamb (about 4-5 lbs)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried)
- 2 tablespoons fresh thyme, chopped (or 2 teaspoons dried)
- 3 tablespoons olive oil
- Salt and black pepper, to taste
- 1 cup red wine or beef broth
- 1 lemon, juiced
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Prepare the Lamb: Pat the lamb leg dry with paper towels.
- Season the Lamb: In a small bowl, mix the minced garlic, rosemary, thyme, olive oil, salt, and pepper. Rub this mixture all over the lamb.
- Roast the Lamb: Place the lamb leg on a rack in a roasting pan. Roast in the preheated oven for about 20 minutes to get a nice sear.
- Reduce Temperature: After 20 minutes, reduce the oven temperature to 350°F (175°C). Continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare or 150°F (65°C) for medium.
- Add Liquids: About halfway through roasting, pour the red wine or beef broth and lemon juice into the roasting pan to keep the meat moist and add flavor.
- Rest the Meat: Once the lamb reaches your desired doneness, remove it from the oven and let it rest for about 15-20 minutes before carving.
- Serve: Slice the lamb and serve with your favorite sides and any pan juices or gravy from the roasting pan.
