I recently made this roasted beet salad, and it was so fresh and flavorful! The earthy sweetness of the beets pairs perfectly with the tangy dressing. Here’s how you can make it:

Ingredients:​

  • 4 medium beets, scrubbed and trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1/2 cup crumbled goat cheese
  • 1/4 cup toasted walnuts
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup olive oil (for dressing)

Instructions:​

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45 minutes to 1 hour, or until the beets are tender.
  2. Once the beets have cooled, peel and slice them into thin rounds.
