Have you ever craved a cheesy flatbread but you want something with a Southeast Asian taste? I have a recipe for a Malaysian cheesy flatbread to satisfy those cravings, I'm sharing here an easy way to make Roti Canai in the comforts of your own home!

Ingredients:
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup warm water
- 2 tablespoons vegetable oil
- 1/2 cup shredded cheese (cheddar or any melting cheese of your choice)
- Butter or ghee for frying
Instructions:
- Prepare the Dough:
- In a mixing bowl, combine the all-purpose flour and salt.
- Gradually add warm water to the flour mixture while stirring, until it forms a dough.
- Knead the dough on a lightly floured surface for about 5-7 minutes, or until it becomes smooth and elastic.
- Divide the dough into 2 equal-sized balls. Cover with a damp cloth and let them rest for about 15-20 minutes.
- Roll Out the Dough:
- After resting, take one of the dough balls and roll it out on a lightly floured surface into a thin circle or oval shape. Aim for about 1/8 inch thickness.
- Brush the surface of the rolled-out dough with vegetable oil.
- Add Cheese:
- Sprinkle half of the shredded cheese evenly over the oiled surface of the rolled-out dough.
- Fold and Rest:
- Fold the sides of the dough towards the center to encase the cheese, forming a square or rectangle shape.
- Allow the dough to rest for about 5 minutes.
- Roll Out Again:
- After resting, gently roll out the folded dough again into a thin circle or oval shape. Take care not to let the cheese escape.
- Cook the Roti Canai:
- Heat a non-stick skillet or frying pan over medium heat. Add a teaspoon of butter or ghee to the pan.
- Carefully transfer the rolled-out dough with cheese into the hot pan. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
- Serve:
- Once both sides are cooked and crispy, remove the cheesy roti canai from the pan.
- Cut it into smaller pieces if desired, and serve hot with your favorite dipping sauce or curry.
