Ingredients:

  • 1 pound beef chuck or stewing beef, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 2 large beets, peeled and grated
  • 2 large potatoes, peeled and diced
  • 2 carrots, peeled and diced
  • 2 cups shredded cabbage
  • 2 bay leaves
  • 2 tablespoons tomato paste
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 1 tablespoon sugar
  • Sour cream, for serving
  • Fresh dill, chopped, for garnish
Instructions:

  1. Brown the Beef:
    • Season the beef pieces with salt and pepper, to taste. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Add the seasoned beef pieces and brown them on all sides, working in batches if necessary. Transfer the browned beef to a plate and set aside.
  2. Sauté Aromatics:
    • In the same pot, add chopped onion and minced garlic. Sauté until the onion is softened and translucent, about 5 minutes.
  3. Simmer the Soup:
    • Return the browned beef to the pot. Pour in beef broth and water, stirring to combine. Add grated beets, diced potatoes, diced carrots, shredded cabbage, and bay leaves to the pot. Bring the mixture to a simmer over medium heat.
  4. Add Flavorings:
    • Stir in tomato paste, red wine vinegar or apple cider vinegar, and sugar. Season with additional salt and pepper, if needed.
  5. Simmer Until Tender:
    • Reduce the heat to low and cover the pot. Allow the borscht soup to simmer gently for 1 to 1.5 hours, or until the beef and vegetables are tender and the flavors have melded together.
  6. Serve:
    • Remove the bay leaves from the soup. Ladle the hot borscht into bowls.
    • Serve the Russian-inspired borscht soup hot, garnished with a dollop of sour cream and a sprinkle of chopped fresh dill.
  7. Enjoy:
    • Enjoy the comforting and nourishing flavors of this Russian-inspired borscht soup, a fusion of earthy beets, hearty vegetables, and tender beef that will transport you to the cozy kitchens of Russia with every spoonful! Приятного аппетита! (Priyatnogo appetita! - Enjoy your meal!)
