Ingredients

For the Salted Peanut Crust:


  • 1½ cups peanuts (lightly salted cocktail type works great)
  • 1/2 cup salted butter (1 stick, 8 tbsp or 113 grams)
  • 3/4 cup all-purpose flour
  • 1/8 tsp salt
  • 2 tbsp granulated sugar
  • 1/2 tsp baking powder
For the Peanut Butter Filling:

  • 3/4 cup cold heavy cream
  • 4 oz cream cheese (full fat, block-style, softened)
  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/2 tsp salt, plus an extra pinch
For the Chocolate Ganache:

  • 8 oz semi-sweet chocolate, finely chopped
  • 1 cup heavy cream
For Decorating:

  • Salted peanuts (optional)
  • Flaky sea salt (optional)
Instructions

  1. Prep: Preheat oven to 350°F (180°C). Lightly spray a 9-inch tart pan or cake pan with nonstick spray. A tart pan with a removable bottom makes slicing easier, but a cake pan works too.
  2. Make the Crust: Pulse peanuts in a food processor until finely chopped (be careful not to over-process into peanut butter). Melt butter in a medium bowl. Mix in crushed peanuts, flour, salt, sugar, and baking powder. Press the mixture evenly into the tart pan and bake for 9 minutes. Cool completely.
  3. Make the Filling: If there are crust crumbs in the bowl, wipe it clean. In a glass measuring cup, whip cold heavy cream until softly whipped (no stiff peaks). Refrigerate. In the same bowl, beat cream cheese until smooth, then add peanut butter, sugar, vanilla, and salt. Mix well. Fold in the whipped cream in two stages, gently combining each addition.
  4. Assemble: Once the crust is cool, spread the peanut butter filling evenly over it. Chill in the fridge while you make the ganache.
  5. Make the Chocolate Ganache: Place chopped chocolate in a small bowl. Heat heavy cream in a small pot until it simmers, then pour over the chocolate. Let sit for 5 minutes, then stir until smooth. If needed, microwave in 15-second intervals, stirring between each, until fully melted. Let cool slightly, then spread over the tart.
