Sausage and Mash

Do you crave a Western dish but don't have time much time to cook? I'll recommend you to try sausage and mash! Here's a simple recipe.

Ingredients:​

For the Sausages:

  • 8 high-quality sausages (pork, beef, or a mix)
  • 1 tablespoon olive oil
For the Mashed Potatoes:

  • 2 lbs (900 g) potatoes, peeled and chopped into chunks
  • 1/2 cup (120 ml) whole milk or cream
  • 4 tablespoons unsalted butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
For the Onion Gravy:

  • 2 large onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon all-purpose flour
  • 2 cups (480 ml) beef or chicken stock
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme leaves (optional)

Instructions:​

  1. Cook the Sausages:
    • Preheat your oven to 375°F (190°C).
    • Heat the olive oil in a large skillet over medium heat.
    • Add the sausages and cook them, turning occasionally, until they are browned on all sides (about 10 minutes).
    • Transfer the sausages to a baking dish and finish cooking them in the oven for another 10-15 minutes, or until fully cooked through.
  2. Make the Mashed Potatoes:
    • While the sausages are cooking, place the chopped potatoes in a large pot and cover with cold water. Add a pinch of salt.
    • Bring to a boil, then reduce to a simmer. Cook the potatoes until they are tender, about 15-20 minutes.
    • Drain the potatoes and return them to the pot.
    • Add the butter and milk (or cream) to the potatoes, and mash until smooth and creamy.
    • Season with salt and pepper to taste. Keep warm.
  3. Prepare the Onion Gravy:
    • In the same skillet you used for the sausages, add the butter and olive oil over medium heat.
    • Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized (about 10-15 minutes).
    • Sprinkle the flour over the onions and stir well to coat.
    • Gradually add the stock, stirring constantly to prevent lumps from forming.
    • Add Worcestershire sauce, thyme (if using), and season with salt and pepper.
    • Simmer the gravy for another 5-10 minutes until thickened.
  4. Serve:
    • Plate the mashed potatoes and place the sausages on top.
    • Generously pour the onion gravy over the sausages and mash.
