Ingredients:
- 4 small corn or flour tortillas
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes

- 4 eggs

- Heat the olive oil in a skillet over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
