- 2 tbsp plain yogurt
- 2 tbsp lemon juice
- 2 tbsp olive oil
- In a bowl, combine minced garlic, cumin, paprika, turmeric, coriander, cinnamon, cayenne pepper, salt, black pepper, yogurt, lemon juice, and olive oil. Mix well to form a marinade.
- Cut the chicken thighs into thin strips and add them to the marinade. Coat the chicken evenly with the marinade, cover the bowl, and refrigerate for at least 1 hour (or overnight for best results).
- Preheat the grill or oven to medium-high heat. If using an oven, preheat to 400°F (200°C).
- Thread the marinated chicken strips onto skewers (if grilling) or spread them out on a baking sheet (if using the oven).
- Grill or bake the chicken for 15-20 minutes, turning halfway through, until the chicken is cooked through and slightly charred on the edges.
- Remove the chicken from the skewers or baking sheet. Serve the chicken shawarma warm, wrapped in pita bread or flatbread, with your choice of toppings and sauces.
