  • Shredded lettuce
  • Diced tomatoes
  • Sliced red onion
  • Tzatziki sauce or garlic sauce (store-bought or homemade)
Instructions:
  1. In a large bowl, combine the chicken thighs, olive oil, cumin, coriander, paprika, cinnamon, garlic powder, cayenne pepper (if using), and a generous pinch of salt and pepper. Toss everything together until the chicken is evenly coated with the spice mixture.
  2. Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken thighs and cook for about 6-8 minutes per side, or until they're cooked through and nicely charred on the outside.
  3. Transfer the cooked chicken to a cutting board and let it rest for 5 minutes before slicing or shredding it into bite-sized pieces.
  4. While the chicken is resting, warm up your pita breads or flatbreads according to package instructions.
  5. To assemble the wraps, lay a pita or flatbread on a flat surface and add a generous portion of shredded lettuce, diced tomatoes, and sliced red onion.
