Ingredients:


  • 3 tablespoons vegetable oil
  • 2 cups thinly sliced celery
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon white sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon cayenne pepper
  • 2 (14.5 ounce) cans crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 bay leaf, crushed
  • 1 tablespoon hot pepper sauce
  • 2 pounds medium shrimp, peeled and deveined
Directions:

  1. Heat vegetable oil in a Dutch oven over medium heat. Add celery, onions, and garlic. Sauté until onions are translucent and celery begins to soften.
  2. Stir in sugar, flour, salt, black pepper, and cayenne pepper. Cook for 1-2 minutes until flour is lightly browned.
  3. Add crushed tomatoes, tomato sauce, crushed bay leaf, and hot pepper sauce. Bring to a boil, then reduce heat to low.
  4. Simmer uncovered for 30 minutes, stirring occasionally.
  5. About 15 minutes before serving, add peeled shrimp to the pot. Stir well to combine. If needed, adjust heat to maintain a gentle simmer until shrimp are pink and cooked through.
  6. Remove and discard bay leaf before serving.
  7. Serve hot over rice or with crusty bread.
