- 1 lb large shrimp, peeled and deveined
- 1 cup buttermilk
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Vegetable oil for frying
- For the sandwich:
- 4 hoagie rolls or French bread
- Lettuce, shredded
- Tomato, sliced
- Pickles, sliced
- For the remoulade sauce:
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp pickle relish
- 1 tsp hot sauce
- 1 tsp lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
- Prepare the shrimp:
- In a bowl, soak the shrimp in buttermilk for 15-20 minutes.
- In another bowl, mix the cornmeal, flour, paprika, garlic powder, cayenne pepper, salt, and pepper.
- Fry the shrimp:
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Dredge the buttermilk-soaked shrimp in the flour mixture, coating evenly.
- Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side.
- Remove and drain on paper towels.
- Make the remoulade sauce:
- In a small bowl, mix together the mayonnaise, Dijon mustard, pickle relish, hot sauce, lemon juice, minced garlic, salt, and pepper.
- Assemble the Po' Boys:
- Split the hoagie rolls or French bread lengthwise.
- Spread a generous amount of remoulade sauce on each side of the bread.
- Layer with shredded lettuce, tomato slices, and pickles.
- Add the fried shrimp on top.
- Close the sandwich and serve immediately.
