- 2 cups cooked rice (preferably day-old)
- 1/2 pound shrimp, peeled and deveined
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, chopped
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Prepare the ingredients: Make sure your rice is cooked and cooled. If you use fresh rice, spread it out on a baking sheet to cool quickly. Chop the green onions and mince the garlic.
- Cook the shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside.
- Scramble the eggs: In the same skillet, add a bit more oil if needed. Pour in the beaten eggs and scramble them until just set. Remove the eggs from the skillet and set aside.
- Cook the vegetables: Add the remaining tablespoon of vegetable oil to the skillet. Add the garlic and cook for about 30 seconds until fragrant. Then add the mixed vegetables and cook for 3-4 minutes until tender.
- Combine everything: Add the cooked rice to the skillet and stir to combine with the vegetables. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to coat the rice evenly.
- Add shrimp and eggs: Return the cooked shrimp and scrambled eggs to the skillet. Add the chopped green onions. Stir everything together and cook for another 2-3 minutes until everything is heated through.
- Season and serve: Taste and season with salt and pepper if needed. Serve hot, and enjoy your delicious shrimp fried rice!
