I'm a huge fan of shrimp, but I can't seem to make a perfect sauce Luckily I've found this recipe out there and it's called, Shrimp Scampi! Below is the step-by-step guide on how to make it!
Ingredients:
- 1 pound large shrimp, peeled and deveined
- Salt and black pepper, to taste
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup white wine (such as Sauvignon Blanc or Pinot Grigio)
- Zest of 1 lemon
- Juice of 1 lemon
- 1/4 cup chopped fresh parsley
- Cooked pasta (such as linguine or spaghetti), for serving
- Grated Parmesan cheese, for serving (optional)
Instructions:
- Prepare the Shrimp:
- Pat the shrimp dry with paper towels and season with salt and black pepper.
- Cook the Shrimp:
- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
- Add the shrimp to the skillet in a single layer. Cook for about 2 minutes per side until pink and opaque. Remove the cooked shrimp from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil.
- Add minced garlic and red pepper flakes to the skillet. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
- Deglaze the Pan:
- Pour in the white wine and scrape up any browned bits from the bottom of the skillet with a wooden spoon.
- Let the wine simmer for 2-3 minutes until slightly reduced.
- Finish the Dish:
- Add the cooked shrimp back to the skillet.
- Stir in lemon zest, lemon juice, and chopped parsley. Toss everything together gently to coat the shrimp with the sauce.
- Taste and adjust seasoning with more salt, pepper, or red pepper flakes if needed.
- Serve:
- Serve the shrimp scampi over cooked pasta.
- Garnish with additional chopped parsley and grated Parmesan cheese if desired.
- Enjoy your flavorful shrimp scampi with a slice of crusty bread or a side salad.
