Shrimp & Tomato Basil Pasta
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 pint cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- 8 oz pasta (spaghetti or linguine)
- 1/4 teaspoon red pepper flakes (optional)
- Parmesan cheese for garnish
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add garlic and cook until fragrant (about 30 seconds).
- Toss in shrimp, seasoning with salt, pepper, and red pepper flakes. Cook for 2-3 minutes per side.
- Add halved cherry tomatoes to the skillet and cook until softened (about 3 minutes).
- Stir in fresh basil and combine with the cooked pasta.
- Serve with grated Parmesan on top.
