A seafood soup you must try!

- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 medium potatoes, diced
- 3 cups seafood stock
- 1 cup heavy cream
- 1 cup mixed seafood (such as shrimp, fish, and scallops), chopped into bite-sized pieces
- Salt and pepper to taste
- Chopped fresh parsley for garnish
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.
- Add the diced potatoes to the pot and cook for another 5 minutes, stirring occasionally.
- Pour in the seafood stock and bring the mixture to a simmer. Let it cook until the potatoes are tender, about 10-15 minutes.
- Stir in the heavy cream and mixed seafood. Simmer gently until the seafood is cooked through, about 5-7 minutes. Be careful not to overcook the seafood.
- Season the chowder with salt and pepper to taste.
- Serve hot, garnished with chopped fresh parsley.
