  • 1 medium butternut squash, peeled and thinly sliced
  • 1 zucchini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 jar (24 oz) marinara sauce
  • 1 container (15 oz) ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil, chopped (for garnish)
Instructions:

  1. Prep the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is soft and translucent, about 5 minutes. Set aside.
  2. Mix the Ricotta: In a medium bowl, combine the ricotta cheese, grated Parmesan cheese, egg, dried oregano, dried basil, salt, and pepper. Mix well until smooth.
  3. Layer the Lasagna: In the bottom of your slow cooker, spread a thin layer of marinara sauce. Add a layer of butternut squash slices, followed by a layer of zucchini slices, and then yellow squash slices. Spread a layer of the ricotta mixture over the squash, then sprinkle with some of the sautéed onion and garlic mixture. Top with a layer of shredded mozzarella cheese. Repeat the layers until all ingredients are used, ending with a layer of marinara sauce and a generous topping of shredded mozzarella.
  4. Cook the Lasagna: Cover and cook on low for 4-5 hours, or until the vegetables are tender and the cheese is bubbly and golden.
  5. Serve: Once cooked, let the lasagna rest for about 10 minutes before serving. Garnish with fresh basil and a sprinkle of Parmesan cheese.
