Ingredients:
For the crust:
- 1 1/4 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
For the filling:
- 1 cup milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 4 large egg yolks
- 8 oz semi-sweet chocolate, finely chopped
- 2 tsp vanilla extract
For the topping (optional):
- Whipped cream
- Chocolate shavings or curls
- Let's start with the crust. In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until it resembles coarse crumbs. Press the mixture into a 9-inch pie dish, going up the sides as well. Bake at 350°F for 8-10 minutes, then let it cool completely.
- Now for the silky filling! In a saucepan, whisk together the milk, cream, sugar, cornstarch, salt, and egg yolks until well combined.
- Cook the mixture over medium heat, whisking constantly, until it starts to thicken and bubble slightly. This should take about 5-7 minutes.
- Remove the pan from the heat and stir in the chopped chocolate and vanilla extract until the chocolate is fully melted and the mixture is smooth and glossy.
- Pour the chocolate filling into the cooled pie crust and smooth out the top with a spatula or the back of a spoon.
- Cover the surface directly with plastic wrap to prevent a skin from forming, and refrigerate the pie for at least 4 hours (or overnight if you can wait that long).
- Once the pie is chilled and set, you can top it with whipped cream and chocolate shavings or curls if you're feeling fancy.
