Ingredients:
- 3/4 cup sugar
- 1/3 cup all-purpose flour
- A pinch of salt
- 4 cups milk
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 1 box vanilla wafers
- 5-6 ripe bananas, sliced
- 1/4 cup sugar (for meringue)
- Preheat your oven to 350ยฐF (175ยฐC).
- In a medium saucepan, whisk together 3/4 cup sugar, flour, and salt.
- Gradually whisk in milk until smooth. Cook over medium heat, stirring constantly, until thickened and bubbly. Remove from heat.
- In a separate bowl, whisk the egg yolks. Gradually whisk in about 1/2 cup of the hot milk mixture to temper the eggs. Pour the egg mixture back into the saucepan, whisking constantly. Return to heat and cook for 2 more minutes. Remove from heat and stir in vanilla extract.
- Spread a thin layer of pudding in the bottom of a 2-quart baking dish. Add a layer of vanilla wafers, followed by a layer of sliced bananas. Repeat layers, ending with pudding on top.
- In a clean bowl, beat the egg whites until soft peaks form. Gradually add 1/4 cup sugar and continue beating until stiff peaks form. Spread the meringue over the pudding, sealing it to the edges of the dish.
- Bake in the preheated oven for 12-15 minutes, or until the meringue is golden brown. Let cool to room temperature, then refrigerate for at least 2 hours before serving.
