- Start by preparing the Southern Fried Catfish. In a shallow dish, mix together the cornmeal, flour, Cajun seasoning, salt, and black pepper.
- Dredge each catfish fillet in the cornmeal mixture, making sure to coat it evenly. Shake off any excess coating and place the fillets on a plate.
- In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until hot but not smoking.
- Carefully add the catfish fillets to the hot oil, cooking them in batches if necessary to avoid overcrowding the skillet.
