I recently whipped up this amazing Spicy Mango Chicken Stir-Fry and let me tell you, it was an absolute flavor explosion! If you're tired of the same old stir-fry recipes and want to jazz things up a bit, this one's for you.

- 1 lb chicken breast, thinly sliced
- 2 ripe mangoes, peeled and diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 2 tablespoons soy sauce
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice, for serving
- Fresh cilantro leaves for garnish
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the sliced onions, bell peppers, minced garlic, and ginger to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
- Return the cooked chicken to the skillet.
- In a small bowl, mix together the soy sauce, sriracha sauce, honey, and rice vinegar. Pour the sauce over the chicken and vegetables in the skillet.
- Add the diced mangoes to the skillet and stir-fry for another 2-3 minutes until everything is heated through and coated in the sauce.
- Season with salt and pepper to taste.
- Serve the spicy mango chicken stir-fry over cooked rice and garnish with fresh cilantro leaves.
