Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup sliced mushrooms
  • 1 cup broccoli florets
  • Cooked rice or noodles for serving
  • Chopped green onions and cilantro for garnish
Instructions:

  1. In a small bowl, mix together the soy sauce, fish sauce, oyster sauce, chili garlic sauce, and brown sugar. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the sliced chicken to the skillet and stir-fry until cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and stir-fry for about 30 seconds, until fragrant.
  5. Add the sliced bell peppers, onion, mushrooms, and broccoli to the skillet. Stir-fry for 4-5 minutes, or until the vegetables are tender-crisp.
  6. Return the cooked chicken to the skillet, along with the sauce mixture. Stir well to coat everything evenly and heat through.
  7. Serve the spicy Thai chicken stir fry over cooked rice or noodles.
  8. Garnish with chopped green onions and cilantro before serving.
