I just made the most amazing Spinach Lasagna, and I had to share it with you all! It's packed with layers of fresh spinach, creamy ricotta, and gooey mozzarella—seriously, it’s comfort food at its finest.
Ingredients:
- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups shredded mozzarella cheese
- 2 cups marinara sauce
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
- Mix the ricotta filling: In a bowl, combine the ricotta cheese, egg, half of the Parmesan, and some salt and pepper. Stir in the fresh spinach.
- Assemble the lasagna: In a baking dish, spread a thin layer of marinara sauce. Lay three lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, then sprinkle a third of the mozzarella on top. Repeat with another layer of sauce, noodles, and ricotta. Finish with a final layer of noodles, the remaining sauce, and top with the rest of the mozzarella and Parmesan.
- Bake: Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let it cool: Allow the lasagna to cool for 10 minutes before slicing and serving.
