Squash & Spinach Quesadillas

Ingredients:​

  • 1 small butternut squash, peeled and thinly sliced
  • 1 cup fresh spinach leaves
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions:​

  1. Heat olive oil in a pan over medium heat. Add the sliced squash, cumin, chili powder, salt, and pepper. Cook for 8-10 minutes until tender and lightly golden.
  2. In a separate pan, warm a tortilla. Add a layer of shredded cheese, cooked squash, and spinach. Top with another tortilla.
  3. Cook the quesadilla for 2-3 minutes on each side until golden and the cheese is melted. Repeat with the remaining ingredients.
  4. Slice and serve with sour cream and salsa on the side! 🌶️
