Ingredients:


  • 1 lb flank steak, thinly sliced
  • 1 tbsp olive oil
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • Salt and pepper, to taste
  • Optional: 1 tsp chili powder, 1 tsp cumin powder
  • 8 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • Optional toppings: salsa, sour cream, guacamole
Instructions:

  1. Cook the Steak:
    • Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
    • Season thinly sliced flank steak with salt, pepper, chili powder, and cumin powder (if using).
    • Cook steak in the skillet for 3-4 minutes until browned and cooked through.
    • Remove steak from skillet and set aside.
  2. Prepare the Vegetables:
    • In the same skillet, add a bit more olive oil if needed.
    • Add thinly sliced bell pepper and onion to the skillet.
    • Season with salt and pepper.
    • Cook for 5-7 minutes until vegetables are tender and lightly caramelized.
    • Remove vegetables from skillet and set aside.
  3. Assemble the Quesadillas:
    • Wipe the skillet clean or use a separate large skillet.
    • Place one flour tortilla in the skillet over medium heat.
    • Sprinkle a generous amount of shredded cheese evenly over the tortilla.
    • Layer cooked steak slices and cooked vegetables over half of the tortilla.
    • Add another layer of shredded cheese on top of the steak and vegetables.
    • Fold the empty half of the tortilla over the filling, forming a half-moon shape.
    • Press down gently with a spatula and cook for 2-3 minutes per side, or until tortilla is golden brown and cheese is melted.
    • Repeat with remaining tortillas and filling.
  4. Serve:
    • Remove quesadillas from skillet and let them cool slightly on a cutting board.
    • Cut each quesadilla into wedges.
    • Serve warm with optional toppings such as salsa, sour cream, or guacamole.
