Ingredients:
- 700g / 1.4lb skinless, boneless chicken thighs (5-7 pieces)
- 1/4 cup ketchup
- 3 tbsp brown sugar, lightly packed
- 1.5 tbsp soy sauce (all-purpose or light, not dark)
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 2 tsp Worcestershire sauce
- 2 cloves garlic, minced
- Preheat your oven to 220Β°C/420Β°F (200Β°C fan).
- Line a large pan with foil (you'll thank me later!) and place the chicken thighs in the pan, making sure they lie flat, not folded or bunched up.
- Make the Glaze β Mix all the glaze ingredients together in a bowl. Spoon about 2/3 of the glaze over the tops of the chicken thighs, reserving the rest for later.
- Bake the chicken in the preheated oven for 15 minutes, then remove the pan.
- Switch the oven to grill/broiler on high and adjust the shelf to about 20cm/8" from the heat source.
- Add the second layer of glaze β Spoon some of the pan juices over the chicken, then drizzle the remaining glaze on top.
- Broil the chicken for 8 to 10 minutes, or until the surface is beautifully caramelized and sticky.
- Remove the chicken from the oven and let it rest for a few minutes before serving with the delicious pan juices.
