Strawberry-Rhubarb Pie
Ingredients:
- 1 cup white sugar, plus 2 tablespoons for sprinkling
- All-purpose flour
- Rhubarb, sliced into ¼-inch pieces
- Strawberries, hulled and quartered
- Double pie crust (store-bought or homemade)
- Butter
- Egg yolk
Directions:
- Prepare the filling: In a large bowl, mix together 1 cup of sugar and flour. Add the rhubarb and strawberries, tossing until fully coated. Let it sit for about 30 minutes.
- Assemble the pie: Pour the filling into a pie crust, dotting with butter. Place the top crust over the filling, crimping the edges with wet fingers to seal. Brush the top crust with egg yolk and cut small steam vents.
- Bake: Place the pie in a preheated oven until the filling is bubbly and the crust is golden brown.
- Cool and serve: Allow the pie to cool on a wire rack before slicing and serving. Enjoy your delicious homemade pie!
