Ingredients:​

For the Filling:

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped into 1-inch pieces
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract
  • 1/4 tsp salt
For the Topping:

  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp cinnamon (optional)

Instructions:​

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Filling: In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, vanilla extract, and salt. Toss until the fruit is evenly coated.
  3. Prepare Topping: In a separate bowl, mix the oats, flour, brown sugar, and cinnamon (if using). Cut in the cold butter with a pastry blender or fork until the mixture resembles coarse crumbs.
  4. Assemble: Transfer the fruit mixture to a greased 8x8-inch baking dish. Sprinkle the oat topping evenly over the fruit.
  5. Bake: Bake in the preheated oven for 35-45 minutes, or until the topping is golden brown and the filling is bubbling.
  6. Cool: Let the crisp cool slightly before serving.
